Pumpkin. Spiced. Everything.
I make banana bread at least twice a month (that may be an understatement!) and right now, we have some delicious pumpkin puree sitting in the fridge from our previous recipe (Pumpkin Spiced Spread) and I just had to use it a few more times to finish it off! By adding pumpkin puree in place of one of the bananas plus a little cinnamon & nutmeg goodness, this bread transforms from a classic Banana Bread into a delicious fall treat! Serve warm with a little salted butter and you will be in October Heaven! (Maybe November too!)
- 0.5 cup butter (1 stick)
- 0.5 cup light brown sugar
- 0.5 granulated sugar
- 2 Eggs Beaten
- 3 crushed bananas
- 115g pumpkin puree
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 2 cups self rising flour
- 0.5 tsp. salt
- 0.5 tsp. vanilla
- Preheat your oven to 350 F
- Cream together butter & sugar until light and fluffy
- Add eggs & crushed banana, pumpkin and spices.
- Combine well
- Sieve your flour and salt into your mixture
- Fold in until completely combined
- Add vanilla and stir.
- Pour into a greased loaf tin
- Bake at 350 F for 1 hour
