Ingredients
- 4 medium sized beets
- 1 4oz. packet of goats cheese
- mixed greens (Enough to line the bottom of the vessel you will use to serve the salad.)
- 0.5 cup balsamic vinegar
- salt & pepper
- Olive Oil
- balsamic glaze (for finishing)
Instructions
- Preheat your oven to 375 F
- wash and pat your beets dry and wrap them in foil with a tbsp of olive oil in each.
- Roast your beets in the oven for approximately an hour. (they may be down after 45 mins so check with a fork)
- once your beets are roasted the skin should rub off easily with a piece of kitchen towel - if not they may not be fully cooked or just grab a peeler and peel them.
- Dice your beets up into small half inch cubes and throw onto a baking sheet.
- Roast for a further 10 mins with 2 tbs of olive oil and sprinkled with salt.
- Once you remove the baking sheet, pour over the balsamic vinegar and mix to combine - all the vinegar should get absorbed by the beets and give them a beautiful balsamic infused taste.
- Now line your serving dish or plate with mixed greens, spoon your beets on the top, crumble your goats cheese over the top of the beets, sprinkle with a tsp of salt & pepper and finish with a zig zag of balsamic glaze and voila!
