This Soup is the Bees Knees! 🐝
I’ve always had a thing for Thai flavors and coconut & lime are a definite flavor vacation for me! This carrot coconut & lime soup is my ideal flavor combination wrapped up into a delicious and comforting bowl of healthy goodness!
The Weather is kinda crazy right? One day its Spring/Summer and I’m out at 8 PM with my dogs without a jacket and then all of a sudden its 30 F again and freezing…It’s like a temperature rollercoaster! It has had me craving all the soups recently if you can tell? This soup is PERFECT for this strange weather – it’s definitely got it figured out!
It is so refreshing that it makes you feel like it could be Summer outside (and it’s so good chilled too) yet it is still warming and comforting enough to be eaten on a snow day! Its the best of both worlds if you ask me & BONUS, it takes no time at all to make and could not be easier!
It has less than 10 ingredients and it takes less than an hour to prepare! If you’re anything like us, that’s a big win and it will keep you going for a few lunches/dinners! Perfect to take in your tupperware to the office too!
This soup also packs some punchy benefits too with turmeric, cayenne, carrot, coconut & lime! If anyone you know has caught the nasty flu thats been going around, I bet turning up at their door with a pot of this will definitely make them (and you) feel so good!

- 1.5 lbs. Carrots - peeled & roughly chopped
- 1 Onion - peeled and roughly chopped
- 1 Tbsp. coconut oil
- 2 cups Veggie Stock
- 4 cups coconut milk
- Zest of 1 lime
- Juice of Half a lime
- 0.25 tsp. Turmeric
- 0.25 tsp. Cayenne
- Salt & Pepper
- Heat your coconut oil up in a dutch oven or large soup pot
- Once hot, add onion & carrot and let sweat for approx. 10-15 minutes until the carrots start to soften and the onion is translucent.
- Add the stock, turmeric, cayenne & lime zest and bring to a boil, allow the pot to simmer for approx. 20 minutes
- Once the carrots are soft, turn off the heat and add the coconut milk & either use an immersion blender or add to your blender and blend until smooth.
- Gently reheat the soup for about 5-10 minutes and add the lime juice and season with salt & pepper to taste!
- Serve with extra black pepper & lime zest!
