Energy Balls are probably one of my favorite things ever 💯 !
I just love being able to go to the fridge at any time and grab a super healthy, delicious energy ball to keep me going! Sometimes it really is all you need to spur you on to complete a task you’ve been putting off or to encourage you to get active in the middle of the day!
And while I LOVE these OG balls more than life itself (🥜🍫)…
It was time for a little change up in the Green household 🍋!
I think we’ll have some of these and some of the OG’s available at all times moving forward! They satisfy such different taste buds. To me, these ones taste like a little vacation whereas the others are cozy and homely! (Am I crazy? Maybe!)
If you’re in the US, we hope you had an awesome long weekend! It feels like one of the first weekends where we’ve had some time to really focus on what we want to do with our time and it was great! We relaxed, spent hours in the kitchen, worked out, went to an awesome urban farm in NYC, went out for dinner, enjoyed time with friends and still had time to relax a little more!
Now that the week is officially in full flow, these cashew lemon coconut energy balls are going down SUPER FAST and I’m thinking I may have to make more before the week is over! Good job they take 5 minutes to put together, only have 6 ingredients and only take an hour to set! 💥

PS. Little Tip – Adding a pinch of black pepper with turmeric boosts its absorption!
- 1.5 cups raw cashew nuts
- 2 TBSP. melted/softened coconut oil
- 1 cup shredded (desiccated) coconut (unsweetened)
- Zest of 2 lemons
- Juice of 1 lemon
- 0.25 cup maple syrup
- 0.25 tsp. turmeric
- Small pinch black pepper
- Optional for texture: 1 TBSP coconut flour (or protein powder)
- Put all ingredients in your food processor and process until smooth and fully combined.
- If adding a tbsp. of coconut flour or protein powder, add at the end.
- Your mixture should be semi-firm and easy to ball up with your hands.
- Roll in extra coconut if desired and place on a sheet in the fridge for an hour to 'set'
- The balls will harden up in the fridge so don't add more than a tbsp. of flour or powder to your mixture even if it seems a little soft! We promise it will firm up.
