Can you believe it’s Easter this weekend?
How did we get to mid April SO fast?
We just got some pretty great news – We get a three-day weekend! Unexpected and so LOVELY. We’ve decided to really use our time wisely and jump in the car to head to Fredericksburg VA for Easter with the family. We cannot wait!! It is a holiday we usually have to miss. It is a very unusual Easter Weekend when there are no events that we need to work!! Hence we are taking full advantage and we sure are going to soak it all in!!
Another awesome thing about this weekend is the weather right now… in Virginia it is insaaaaaane for April. 86 F!! We’re gonna need to dig out our swim gear early! We’ll also need to find the dogs their pool from the depths of the basement too! Can’t have overheated pups, they won’t know what has hit them!! (Yay for Doggy Ice Cream!)
The third awesome thing about this weekend is that we get to see alll the Bishop side of the Green family (well that’s a confusing sentence!) I guess what I mean by that (in an easier to understand way) is that we get to see all of Allen’s Momma’s side of the family, including the Grandparents and Uncles & Cousins 💚 (Not that I’m Bias or anything) But I am SO excited to see Everly Rose (the littlest Bishop) – and her parents too of course!! She gives some pretty darn good cuddles & she’s the best photography Muse – Just ask her Dad (@bishoto) ! 😍
Talking of Children/Kids/Babies/Toddlers…this recipe is SUCH a fun one to do with them this Easter weekend (or any time really!!). So easy, so fun & so delicious. Cornflakes, Melted Chocolate & Mini Eggs – Voila, an Easter dessert fit for a King or Queen! They are super cute and really add something special to your Easter table – especially when the little ones can explain how they made them!
These Cornflake Nests also remind me of home.
Easter’s at home ALWAYS included Cornflake Nests (or Shredded Wheat Nests – favored by my sister, Sophie) As young children we used to make them at School and bring them home on Good Friday. As we got older we made them because they are just adorable. My mum once included the addition of these super cute tiny little yellow fluffy chicks among the mini eggs and I could have died from the cuteness. (Don’t ask me how old I was cause I literally have no idea!!) But basically…
Chocolate Cornflake Nests = Easter Meal Time Necessity
- 7 oz. dark chocolate
- 2 tbsp. Maple Syrup (can sub for Honey, Golden Syrup)
- 0.25 cup butter
- 3oz. cornflakes
- 36 cadburys mini eggs
- Line a muffin/cupcake tin with paper cases
- Put chocolate, syrup & butter into a dual saucepan and heat gently until melted
- Take the bowl from the heat & stir the cornflakes in gently
- Once it has cooled enough to handle (2-3 mins) - spoon equal amounts into each paper case.
- Make a well in the center of each one with your finger or the back of a spoon
- Place three mini eggs into each 'Nest'
- Place in the fridge to set for at least 15 minutes.
- Take to your family Easter gathering & enjoy!!
