Hiiiii, we’re back! Strangely, I decided a post about pickled red onions was just the PERFECT way to kick off the blog again! However, these really are easy peasy & so vibrant that they make me very happy, so I guess that’s all that matters!
These are seriously the easiest pickled red onions! We put them on EVERY. SINGLE. SALAD we make. Definitely for the last year or so. They make everything better! I am not a raw onion on its own, kind of girl, or at least not yet..I can’t speak to the future! But these pickled red onions add a little sweet, a lot of bite & a great crunch to your salads (& sandwiches too!)
I always thought pickling was a hassle, but this is about 5 ingredients, no need to heat (you can if you want the change to happen quicker) but if you’ve got 12-24 hours before you want to eat them, you just throw all the ingredients into an airtight jar, let it sit out for a couple hours and then refrigerate overnight.
Voila, the most delicious pickled onions at your fingertips, for use on EVERYTHING.
We know you won’t regret it if you try these! Especially if you make them for our Quinoa Salad (coming to the blog tomorrow!)!

Easy Peasy Pickled Red Onions
Ingredients
- 1 red onion, sliced thinly
- 0.75 cup Apple Cider Vinegar
- 0.5 cup Water
- tsp. mustard seeds
- tsp. coriander seeds
- tbsp. sugar
Instructions
- Put your onions in an airtight jar (do not seal lid)
- Mix all other ingredients together in a bowl or jug
- pour liquid mixture over onions
- seal airtight jar
- leave on the counter for 1-2 hours before refrigerating overnight.
- In 24 hours or less, you will have vibrant, delicious pickled red onions!
