When is it NOT a good time for Pina Coladas? 🤷♀️

Even the song goes, 🎼 ‘if you like pina coladas and gettin’ caught in the rain’ 🎼… so maybe they really do go hand in hand? 😂 So, a bit sidetracked there, but, seriously these are the freshest, easiest and most delicious Pina Colada’s I think I have ever made/had.
Just three Ingredients (and if you’re making virgin – only two!)
Pina Colada’s have always been my all time favorite flavor combination, as long as I can remember, anything pina colada flavor was high on my list. Before I even knew what they were or that they were actually an alcoholic beverage! I just knew that the flavor combination was like a heavenly coconut pineapple vacation in my mouth and made me intensely happy whenever I had one!
So, with that said, I am quite surprised that its taken me this long to get a recipe up for them! However, maybe it’s because I had to wait for this super simplified, super easy & much healthier version to spring into my head? I am so excited to share this recipe with you and I can’t wait to see what you all make it for! A lazy Sunday, a garden party or a vacation themed spring fling! Who knows, I just know you’re gonna love it as much as we do!
Just. Three. Ingredients 😍

- Half a pineapple (pureed in your food processor)
- Half a can of coconut Cream
- Rum (We use white rum, but delicious with Golden or Spiced too!)
- Ice
- Start by Cutting & Pureeing your Pineapple (The easiest way is to skin the pineapple with a knife after cutting off the top and bottom - then cut around the core (or use a corer if you have one) and then roughly cut into similar size chunks and put half in the blender (should create approx. a pint of puree)
- Add 1 cup of ice, your pureed pineapple & half a can of natural coconut cream to your blender (if making boozy, add 1.5 oz. Rum per person)
- Blend until smooth - the texture will be perfection!
- Pour into 2 (Virgin) or 4 (boozy) cocktail glasses of your choice and garnish with pineapple leaves & flaked coconut
- This recipe will serve 2 Virgin Cocktails or 4 Boozy cocktails
