This Dip is EVERYTHING.
It is wholeheartedly inspired by my favorite restaurant in Brooklyn, Miss Ada. They have a whipped ricotta on their menu and I have told almost everybody that will listen that it is most definitely the last meal I would want before I died.
Now I understand that is a BIG statement, but for this whipped ricotta, it could not be more true!
I had to do my best to recreate it at home! Due to the crazy times we are living in, getting out to Brooklyn is a luxury. We eat all of our meals, 99% of the time at home now. It is a rare occasion we get to enjoy the sidewalk restaurants of the city! (We do order in sometimes however and we urge you to do that same, as we all have to support local as much as possible!!)
It is lovely though to create a perfect night in with something as easy and delicious as this dip. Pair it with a delicious glass of your favorite wine or try out this Mocktail which would be killer with it! Light some candles, put on your favorite music and enjoy time with the one or ones you love! We really have to make the most of every minute/hour we get with our families, now more than ever.
So, back to the whipped ricotta; Just 4 delicious ingredients, a tiny food processor & a saute pan and you’ve got yourself a winner. It is PURE VELVET, the perfect amount of sweet and salty plus the nuttiness from the brown butter. It is utter comfort in a pot. It pairs perfectly with some toasted or grilled pita breads. (We’ve been told it goes pretty well in crepes too…hang tight for some recipe inspiration there!)

Maple, Brown Butter, Whipped Ricotta
Ingredients
- 1 Cup of Whole Milk Ricotta
- 1 TBSP Maple Syrup
- 3 TBSP Browned Butter (Instructions below)
- Pinch of regular sea salt
- Pinch of Finishing Salt (ie. Maldons, large flake salt)
Instructions
- Firstly, let’s make that browned butter.
- Put 3 TBSP of butter into a shallow pot or saute pan and heat on medium low, the butter will start to melt, then bubble and then start to change color. Make sure to keep whisking constantly throughout the process. It may take a little longer than you think but as soon as you see the rich amber color starting to come through you can turn off the heat and allow it to cool.
- Into your food processor put, the cup of ricotta, 1 tbsp of the browned butter, 1 tbsp maple syrup and a pinch of regular salt.
- Pulse or grind on low for a minute or so, you will see the color change slightly and the texture become velvety.
- Once beautiful and smooth, taste and see if you need to add anything such as a little more maple if you like it sweeter or a little more salt if that’s your thing!
- Once completed, spoon into the jar you’ll serve out of and make a little moat in the top, pour the remainder of the brown butter onto the ricotta
- Finish with some flaky sea salt and enjoy with toasted pita or crackers!
