Sunday Indulgences are the best! We’ve had a particularly wonderfully lazy one at our house with the added benefit of some bubbly and red velvet cupcakes! What also makes Sundays especially lovely for us, are our pups who couldn’t enjoy a lazy Sunday more if we asked them to! Current Situation – pups at the end of the bed lounging whilst we completely binge on The Crown series on Netflix. We’ve been due for one of these Sunday’s for a while now and we couldn’t be happier or more content! We whipped up these cupcakes this morning whilst eating breakfast (pancakes with bacon, eggs, butter & maple syrup…yummmm) they are such a simple delight that remind me of the many weekends spent baking at home. My sister Sophie and I always enjoy baking cupcakes together and I can’t wait to see what our next baking weekend brings!
We hope you enjoy this recipe and make them the next time you feel you deserve a little home indulgence – which we would like to encourage as often as humanly possible to all of our family & friends!
- 60g Butter (Just over half a stick)
- 150g Sugar
- 1 Egg
- 20g Cocoa Powder
- one bottle of red food coloring (approx. 30 ml)
- 0.5 tsp vanilla extract
- 120ml Buttermilk
- 150g self raising flour
- 300g Icing (Confectioners) Sugar
- 50g butter
- 125g cream cheese
- Preheat oven to 190 C or 375 F
- Whisk sugar & butter together until fluffy
- Add egg slowly and continue whisking until fully combined
- In a separate small bowl mix together cocoa powder, red food coloring & vanilla extract together to create a smooth paste (add extra food coloring or a little oil if it is too thick)
- Add paste to mixture and whisk until completely combined
- Place your whisk on a slow speed and add half of the milk
- Add half of the flour and combine
- Continue with the other halves until you have a smooth mixture.
- Spoon or scoop into 12 paper cases in a cupcake (or muffin) tin
- Bake for 25 minutes exactly
- Get them out to cool completely before frosting!
- Beat Icing (Confectioners) sugar and 20g butter until well combined
- Add cream cheese and rest of butter and beat until smooth, light & fluffy!
- You can top with grated or peeled chocolate!
